Family run business
In 1890 Pastelaria Gregório and Fábrica de Queijadas were founded by Gregório Casimiro Ribeiro. After he died his only child Álvaro d’Almeida Ribeiro inherited both the factory and the pastelaria.
Álvaro died in 1982. He left the pastelaria to his eldest son, while the youngest son inherited the factory.
They renamed the factory – which at the time was called Queijadas do Gregório- to Fábrica de Queijadas – Recordação de Sintra (memory of Sintra).
Not only were they making Queijadas in the factory, they started doing biscuits and salame de chocolate as well.
Different cookies
Every day they bake more than 100 kilos of cookies here – that’s quite a lot for such a small factory that only has 1 biscuit machine. In many bakeries in the region you can buy Fabrica de Queijadas biscuits.
There are so many different types of biscuits that it is difficult to choose which one to take with you from the factory: Bolachas de Chocolate (chocolate biscuits), Areias (sand biscuits), Brôas de Mel (honey biscuits), Brôas de Limão (biscuits with lime) and Biscoitos de Amêndoa (almond biscuits). But they also have delicious pastéis de nata and don’t forget the Sintra specialty: Travesseiros.
In the factory there are large storage boxes where they store the cookies – our daughter was lucky enough to meet the Gingerbread man’s box and got a delicious biscuit from it.
Queijadas as a craft
The Queijadas are made manually in the factory, at a rate of 200 per day. The delicious cheese cookies are sold in Lisbon. Besides the fact that Fábrica de Queijadas makes the tastiest Queijadas, these cheese cookies are also very popular with locals.
The queijadas you buy in the factory are the same as in Pastelaria Gregorio. That goes for all the goodies they sell in the pastelaria.
No time to visit Sintra?
Good news if you don’t have time to visit Sintra but are very curious about the Queijadas from Fábrica de Queijadas. Since June 2018 Fabrica de Queijadas can also be found at the
Time-Out Mercado da Ribeira in Lisbon.
